Limefinger aims to produce a style that pursues the “less equals more” ideology. We want to make subtle, pure wines that possess fine structure, restrained alcohol and bright acidity.

By sourcing premium quality fruit from well maintained vineyards planted on suitable soils in an East-West orientation, we give ourselves every chance of producing the style of wines that we wish to make.

While the plan is to produce and release additional wines from the best sub-regions of Clare, the volumes of Limefinger wines will only ever be tiny – a few thousand bottles of each wine.

 

Limefinger aims to carry out the business of growing grapes and making wine in a sustainable manner.

Our vineyards are sprayed using organic products and irrigation is kept to a bare minimum – just enough to sustain the vine and ripen its crop.

We use a straw mulch under the vines to preserve moisture and provide a weed free zone that is a haven for worms, insects and microbes.

Summer weed growth between the rows is encouraged and winter cover crops are also sown. These are mown and incorporated back to the soil. No fertilisers are applied.

All materials used in the bottling and packaging our wines are recyclable – bottles, cartons and screw caps.
