Limefinger pursues the less equals more ideology with our winemaking. We aim to produce subtle, pure wines that possess fine structure, restrained alcohol and bright acidity.
By growing and sourcing premium quality fruit from well maintained vineyards planted on suitable soils in an East-West orientation, we believe we give ourselves every chance of achieving our goals.
Limefinger aims to carry out the business of growing grapes and making wine in a sustainable manner.
Summer weed and grass growth between the rows is encouraged and winter cover crops are sown when the conditions allow it. These are mown and incorporated back into the soil creating a haven for worms, insects and microbes.
All materials used in the bottling and packaging of our wines are recyclable – bottles, cartons/liners and screw caps.
The volumes of Limefinger wines will only ever be tiny – a few thousand bottles total per annum.
